–      Nicolas grew up as a Greek inner-city Philly kid. He went to culinary school and left after only 3 weeks.

–      He says food is in his blood because his mom and dad first met working at a diner when they came to the US. He remembers chopping onions in the back of his dad’s pizza shop, and his family putting whole lambs on the spit in their backyard.

–      Nicolas has sacrificed a lot to make food his career, from not seeing his friends for months at a time, to mountains of school tuition. He now works as the lead line cook at The Jose Garcez-Distritio Restaurant which is ranked 17th in the city. He can handle volume and Gordon Ramsay because he currently does a combined 900 covers from Saturday – Sunday.

–      Nicolas was nicknamed “The Hulk,” because of his short temper. Nicolas never thought he’d be where he is in his career now, and he’s happy cooking gave him direction and kept him from the 9-5 route.
