–      After eating her first expensive steak when she was young, she knew she wanted to cook amazing food for people.

–      Graduated high school when she was 16 and moved to Los Angeles on her own when she was 17 but only lasted 2 years and then went back home.

–      Her mom signed over her guardianship to her wealthy aunt in Texas so she could have a better life and education.

–      Vita gave Los Angeles a second chance at 24, went to culinary school and jumped right into the kitchen.

–      She opened the Rooftop at the Wilshire Hotel under world renowned chef Eric Greenspan, who was harder on her because she was a female in preparation for future jobs and he saw talent in her.

–      Doesn’t consider herself competitive because she’s confident enough to know she will end up on top

–      Recently catered an ingredient specific and challenging event to celebrities at Coachella in 110 degree weather. She says there is no way Hell’s Kitchen can be tougher than that job and is ready to kick some ass in the kitchen!
